At most places, elote has a few simple ingredients. Grilled corn. Some mayo and/or crema. Cilantro, cotija, chile powder, and maybe more, maybe less. Maybe a bright squeeze of lime to finish. At Vecina, a new restaurant in Arcadia, elote has some 40 ingredients.

Vecina means “neighbor” in Spanish — an apt name for this lively neighborhood hangout that consistently buzzes with regulars as Latin hip-hop plays in the background. The menu includes dishes like Peruvian-style hiramasa ceviche; pork belly tacos; mesquite-grilled prime carne asada rib-eye; and carnitas empanadas with manchego cheese, onion marmalade, and salsa verde. Half of the city’s most venerated steakhouses are just five minutes away, and not one of them has served me a ribeye this good. It’s all sizzle and jus, lush with melting fat and brightened by a light, carne asada-style marinade. I’m tempted to exclaim that it doesn’t need a damn thing more, and it truly doesn’t, but I’m worried if I say that they’ll take away my tangle of charred scallions, silky habanero-spiked pommes puree and perky, crisp escabeche.
